Bajan Seasoning

This is a cornerstone of tasty Bajan cooking. This wonderful timesaver is used to season fish, chicken, meats, dips, stocks and soups. It is available ready made, however, the homemade version in this recipe is especially delicious and it keeps for months in the fridge.

Ingredients

6oz/185g spring onions

1 head of garlic

1lb/500g (6-7 medium) Spanish onions

4 sprigs of fresh thyme

4 sprigs of fresh marjoram

Handful of fresh parsley

Handful of fresh basil

1 tablespoon curry

1 tablespoon salt

1 tablespoon celery salt

1 tablespoon paprika

2 tablespoons fresh ground black pepper

1/2 teaspoon ground cloves

1 scotch bonnet or 3 chili peppers or 2 tablespoons of red pepper sauce

Optional:

Handful of fresh coriander (cilantro, chardon beni)

Handful of celery leaves

All purpose powdered seasonings

Cumin and turmeric

Method

  1. Chop up the spring onions.
  2. Peel and chop the Spanish onions.
  3. Peel all the garlic.
  4. Pick the leaves off the stems of the thyme, marjoram and parsley.
  5. Place all the ingredients into a food processor and process for about 5 minutes.
  6. Store in the fridge in two 10oz/300ml or one 20oz/600ml glass jar.
